Discover our selection of Cordon Bleu, a tribute to the Swiss tradition born in Valais in the 1940s, when a chef had the idea of enriching the classic cutlet with ham and cheese.
At the Locanda we revisit this iconic dish with seasonal and local ingredients:
from the classic with ham and cheese, to the creative with porcini mushrooms, to the surprising with cabbage and Gruyère.
Each dish is prepared with passion and carefully selected ingredients, to offer you an authentic and delicious experience.
THE SWISS ELEPHANT EAR
Very tender veal cutlet, approximately 400g, thinly sliced according to tradition
and slowly browned in clarified butter, served with rocket, cherry tomatoes and parmesan shavings
